Olive Oil Joe’s Buenos Dias Huevos & Bacon Breakfast

If you listened to our podcast with Joe Uhan, you know he likes olive oil (to stay warm) and bacon and eggs (to stay healthy.) Here you go!

Olive Oil Joe’s Beunos Dias Huevos & Bacon Breakfast

6 eggs – cage-free, vegetarian-fed brown eggs

4 strips thick cut bacon – preferably nitrate preservative-free

1 tbsp coconut oil

1 tbsp full-fat butter

1 oz grated parmesan or cheddar cheese

1 avocado

Heat skillet to medium to medium high heat

Add 1/2 coconut oil to skillet, allow to melt and spread

Add 1/2 tbsp butter on top of coconut oil

Crack three eggs into skillet, cook to over-medium, seasoning with salt and pepper, to taste.  Flip.  Slide onto plate. Repeat process with other three eggs, remaining fats.

Fry or microwave strips of bacon seperately.

Remove skin and pit from avocado and cut into 1/4″ slices.
Stack eggs on plate, garnishing with cheese and avocado.
This breakfast is about 1300 calories, with at least 50% from fat (and, arguably, <10% carbohydrate, with zero sugars).
When running >8-10 miles per day and working 9 hours in the clinic, my daily calories needs top 4000 calories.  So while this meal seems enormous, it is merely a strong starting point for an active day, and keeps me fat-burning all morning and into the afternoon!
