Wardian’s Granola Bars

Wardian Granola Bars

2 cups old-fashioned oatmeal

1 cup sliced almonds

1 cup shredded coconut

1/2 cup sunflower seeds

3 tablespoons butter

1/2 cup honey

1/4 cup brown sugar

1 1/2 teaspoons vanilla extract

1/4 teaspoon salt

Handful of diced dried apricots

Handful of Craisins

Preheat the oven to 350 degrees. Grease an 8 by 8-inch baking dish and line it with parchment paper.

Toss the oatmeal, almonds, coconut and sunflower seedson a baking sheet and cook 10 to 12 minutes, stirring half way. Transfer the mixture to a large mixing bowl.

Reduce the oven to 300 degrees.

Bring the butter, honey, brown sugar, vanilla and salt to a boil in a small saucepan over medium heat. Stir for a minute then pour over the toasted oatmeal mixture. Add the apricots and Craisins and stir well.

Pour the mixture into the 8×8 prepared pan. Wet your fingers and firmly press evenly across the pan. Bake for 25 to 30 minutes or until the top browns. Cool for severalhours before cutting. Serve at room temperature and store in a Ziplock bag.
